What better way to bring summer to life than with a combination of blueberries and peaches? For a guaranteed hit, warm up a whole brie cheese in the oven and top it with this lightly spiced fruity salsa.

Ingredients
- 250 mL (1 cup) fresh blueberries
- 1 ripe peach, diced
- ½ to 1 jalapeño, diced
- Juice of 1 lime
- 15 mL (1 tbsp.) mint, chopped
- 15 mL (1 tbsp.) honey
- 5 mL (1 tsp.) ginger, freshly grated
- Salt and pepper
- 1 Brie cheese (about 12 cm/5 inches in diameter)
- Sliced baguette bread
HOW TO
Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper.
Combine blueberries, peach, jalapeño, lime juice, mint, honey, ginger, salt and pepper to taste. Taste and adjust seasoning if necessary.
Let the salsa sit for 15 minutes at room temperature to give the flavors time to mix.
Place the cheese on the baking sheet and bake until the Brie is hot and slightly softened, about 2 to 5 minutes. Be careful, if left in the oven too long, the brie will melt and start to run.
Transfer cheese while still warm to a serving plate. Top with salsa and serve with sliced baguette.
Tips
Use plums instead of peaches, if that’s what you have on hand. You can also make the salsa hotter by using bird’s eye chili instead of jalapeño.
