In Italian families, we are familiar with bruschetta because it is served for all occasions. Change the habit and try my favorite combination: fresh tomatoes and goat cheese. You’ll find out why bruschetta is an Italian classic that is often found at my table!

Ingredients
- About 250 mL (1 cup) goat cheese
- Approximately 125 mL (½ cup) extra virgin olive oil
- Salt and pepper from the mill
- Half of a small onion
- 1 tomato (or 3 Campari tomatoes)
- 1 sweet banana pepper
- Handful of basil leaves
- .½ baguette bread
- 1 large clove of garlic
HOW TO
Preheat grill to high heat.
In a medium bowl, mashed potato goat cheese with a fork until smooth and creamy. Drizzle with a little olive oil to taste and season. Mix well. Set aside.
Slice onion, tomato, banana pepper and basil very finement. Set aside.
Cut the baguette into 12 slices and generously brush both sides of each slice with olive oil. Place bread on a baking sheet.
Toast bread under the broiler for 1 to 2 minutes on each side. Rub hot toast with garlic clove.
Spread a little of the goat cheese mixture on each slice of toasted baguette. Garnish with onion, tomato, chili and basil. Drizzle a little olive oil over each bruschetta.
Serve immediately.
