Sweet and Spicy Caramelized Peanuts

500 ml (2 cups)

Ingredients

  • 250 mL (1 cup) sugar
  • 45 mL (3 tbsp.) water
  • 500 mL (2 cups) unsalted peanuts
  • 10 mL (2 tsp.) kosher salt
  • 5 mL (1 tsp.) smoked salt
  • Pinch of cinnamon
  • Pinch of cayenne pepper, or to taste

HOW TO

In a saucepan, heat sugar and water over medium heat until sugar is dissolved and liquid begins to boil, 3 to 5 minutes. Add remaining ingredients.

Cook, stirring occasionally, until sugar crystallizes (texture will be sandy).

Transfer to a baking sheet and let cool completely. Store in an airtight container
