Ingredients

  • 2 1/2 cups herb seasoned bread crumbs (we used Pepperidge Farm’s classic stuffing bread crumbs)
  • 1 1/4 cups salsa, no-sugar added
  • 1/2 cup water
  • 1.5 pounds chicken breast filets, cut into small bite size pieces
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 cup shredded Mexican style cheese
  • 1 (15 ounce) can black beans, drained
  • diced green onions, optional garnish

Instructions

  1. Preheat oven to 400 degrees.
  2. Combine bread crumbs, salsa, and water. Set aside.
  3. In a 9 x 13-inch casserole dish, combine chicken pieces, spices, salt, pepper, 3/4 cup cheese, and black beans, toss to combine.
  4. Add crumb mixture to the top and spread evenly, top with remaining cheese.
  5. Bake 35 minutes, or until chicken is cooked through. Enjoy!
