Ingredients
- 1 (13 ounce) loaf whole wheat French bread, sliced into 20 pieces
- 8 large eggs
- 2 cups low-fat milk, optional almond milk
- 1 teaspoon pure vanilla extract
- 1 teaspoon cinnamon
- 2 tablespoons coconut palm sugar or honey
- Topping
- 1/4 cup sucanat, optional coconut palm sugar or honey
- 1/2 cup minced pecans
- 1 teaspoon cinnamon
Instructions
- Lightly mist a 9″ x 13″ x 2″ casserole dish with non-stick cooking spray. Arrange bread slices in two rows, slightly overlapping pieces. In a large mixing bowl, whisk together eggs, milk, vanilla, cinnamon and sucanat. Pour mixture over bread, making sure all bread is moist. Cover and refrigerate overnight.
- Preheat oven to 350 degrees. Combine topping ingredients, sprinkle evenly over the top of bread and bake 35 to 40 minutes, or until golden. Serve with fresh berries or a drizzle of pure maple syrup.
- NOTE: Whole Wheat French Bread can be purchased in the bakery section at most Walmart Super Centers, for about $1.00.
