Nanny’s Cake Coconut Pineapple !!!

A very simple cupcake to make … with pineapple and coconut … which go together wonderfully ..

Ingredients for 6 to 8 people:

  • 340 g sliced ​​pineapple
  • 225 g butter
  • 200 g sugar
  • 1 teaspoon of liquid vanilla
  • 5 eggs
  • 250g of flour
  • 2 tsp baking powder
  • 50 g grated coconut + 2 tablespoons for decoration

Instructions :

  1. Preheat oven 180 ° C.
  2. Drain pineapple tranches & keep juice.
  3. In a saucepan, caramelize 25 g of butter with 25 g of sugar and 4 tablespoons of pineapple juice. Reserve the caramel.
  4. Grease a cake pan and sprinkle with coconut. Distribute the caramel on the bottom and arrange the pineapple slices. Cutting rest pineapple tranches .
  5. Mix the 200g of butter with the rest of the sugar (175g), the vanilla and add the eggs one by one.
  6. Sift the flour and baking powder. Pour over the preparation. Mix well. Stir in the coconut, remaining pineapple and 2 tbsp of pineapple juice;
  7. Pour the batter into the mold. Bake at 160 ° C for 45 min.
  8. In a pan, toast 2 tablespoons of coconut for 2 minutes, stirring constantly.
  9. When the cake is cooked, wait 10 minutes before unmolding. SPRINKLE with coconut.
