Mint and coconut fruit salad

It’s easy to fall into a rut and always make our fruit salads with the same ingredients. Adding some tropical flavors to the mix (and a little rum) makes fruit salad interesting again!

6 to 8 servings

Ingredients

  • ½ medium size watermelon
  • 1 cantaloupe, halved, seeded
  • 1 small pineapple, peeled and diced
  • 2 bunches of seedless green grapes
  • Juice of 2 lemons
  • 125 mL (½ cup) dark rum
  • About 75 mL (⅓ cup) coconut, freshly grated
  • 30 mL (2 tbsp.) fresh mint, chopped

How to

  1. Using a melon baller, scoop watermelon and cantaloupe into balls. (You can also dice them.)
  2. Pour into a large bowl. Add pineapple, grapes, lemon juice and rum.
  3. Mix well. Refri-manage for at least 30 minutes.
  4. Before serving, sprinkle the coconut and mint over the salad.
