A carrot is just as wonderful as it is unchanged, but roasting it definitely has a way to bring up its sweet side and make it extra delicious. We’re big on using roasted carrots in my house – we always seem to have the juicy orange root vegetable on hand anyway, they go with just about any meal, and we just can’t get enough of their caramel sweetness. Roasted carrots in honey and honey butter, with their sweet and buttery coating topped with thyme, is one of our favorite ways to prepare it.
Roasting a carrot is simple — you can toss it in some oil, sprinkle it with salt, and the oven does all the work to develop its sweetness — but sometimes you can add a few extra ingredients to really make the flavors pop. Here, carrots are tossed in a mixture of honey, butter, and thyme before they head to oven, former play up sweetness that’s already there while latter 2 provide a buttery grassy balance.
Ingredients :
° 1 pound baby carrots, peeled and trimmed
° 2 tablespoons melted butter
° 2 tablespoons honey
° 1/2 teaspoon dried thyme
° ° 1 tablespoon finely chopped fresh parsley
Kosher salt and freshly ground black pepper, to taste
Preparation :
Heat the oven to 400 degrees Fahrenheit. Line a baking tray with tin foil and coat with cooking spray or brush with oil.
Arrange the carrots in a single layer on a prepared baking sheet.
In a small bowl, mix together butter, honey, thyme, salt, and pepper. Pour over carrots and toss to coat evenly.
Bake until carrots are softened and browned, about 25-35 minutes.
Sprinkling with additional salt & parsley, if wanted .
