Citrus carpaccio

Full of color, texture and flavor, this carpaccio is probably one of the easiest recipes in this book. Just choose the juiciest fruit for a dish that everyone at brunch will enjoy.

Ingredients

  • 1 large orange, peeled
  • 1 red grapefruit, peeled
  • 125 mL (½ cup) honey
  • 5 mL (1 tsp.) fennel seeds
  • 1 cinnamon stick
  • ½ vanilla bean
  • 30 mL (2 tbsp.) chopped raw pistachios, for garnish
  • Mint leaves, for garnish

How to

Slice citrus fruit fines horizontally and remove seeds.

In a small saucepan, combine honey, fennel seeds, cinnamon stick and vanilla bean. Heat over low heat for about 5 minutes, or until honey is syrupy and fragrant.

Strain the honey syrup and pour over the fruit slices. Decorate with pistachios and mint leaves.
