Ingredients
- 1 cup rice flour, brown or white
- 1⁄2 cup potato starch, not potato flour
- 1⁄4 cup tapioca flour
- 2 tsp baking powder
- 1 tsp salt
- 1⁄4 cup oil
- 2 egg, optional (see notes)
- 1 1⁄2 cup buttermilk, or regular milk
- 1 tsp sugar
Directions
- Mix all ingredients together with a whisk. If batter is too thick, add a bit more milk. If it’s too thin, add a little rice flour.
- Cook in batches in a waffle maker.
- Note: these can be made without eggs – just add a little more liquid to make up for them.
