And do you know why? It’s because you BOIL THE GARLIC with the potatoes! Wow! I’m seriously amazed that I made it nearly 30 years without knowing this secret. Garlic mashed red potatoes RECIPE:
8 medium red potatoes, quartered
3 cloves of garlic
2 tbsp butter
1/2 c. fat-free milk (or whatever you have)
1/2 tsp. salt
1/4 c. grated parmesan cheese
Instructions:
Place quartered potatoes and garlic in a medium-large saucepan and boil until potatoes are very tender. Drain well and stir in your goodies. Ta-da! You’ve just performed a miracle in the kitchen.
