Garlic Mashed Red Potatoes – Pinterest MUST

I’ve always just thrown stuff in my mashed potatoes.  They’ve historically been pretty good, but I could never get them to cross over into the amazing category…until now.  This recipe is GOLD.  And do you know why?  It’s because you BOIL THE GARLIC with the potatoes!  Wow!  I’m seriously amazed that I made it nearly 30 years without knowing this secret.  The other cool thing is you don’t put that much butter in this recipe.  And it should be noted that it’s super quick and easy.  They even mashed up with very little effort.  I’m in love…

Garlic mashed red potatoes RECIPE:

8 medium red potatoes, quartered
3 cloves of garlic
2 tbsp butter
1/2 c. fat-free milk (or whatever you have)
1/2 tsp. salt
1/4 c. grated parmesan cheese

Instructions:

Place quartered potatoes and garlic in a medium-large saucepan and boil until potatoes are very tender.  Drain well and stir in your goodies.  Ta-da!  You’ve just performed a miracle in the kitchen.
