Endives with smoked salmon

I’ve been making this appetizer for years and can’t get enough of it. The bitterness of the endive file the perfect love with that slightly sweet little taste of the smoked salmon, under the cheeky air of a beautiful cheese topping. These bites will brighten any special occasion. Gather them on a serving plate at cocktail parties, or serve two or three per person as appetizers.

Ingredients

  • 125 mL (½ cup) cream cheese, room temperature
  • 15 mL (1 tbsp.) green onion, chopped
  • 15 mL (1 tbsp.) dill, chopped
  • 15 mL (1 tbsp.) lemon juice
  • Set and pepper mill
  • 16 endive leaves (about 2 endives)
  • 140 g (5 oz) smoked salmon, sliced finement
  • 15 to 30 mL (1 to 2 tbsp.) chives for garnish, chopped

HOW TO

Whip cream cheese until smooth. Add green onion, dill, lemon juice, salt and pepper to taste. Mix well.

Spoon about 1 ½ tablespoons (20 mL) of the cream cheese mixture into each endive leaf.

Place a slice of salmon on top of the cheese. Garnish with chives.

Tips

Change the flavor of the cheese by adding a little chopped tarragon to the fresh herb mixture. You can also replace the cream cheese with lightly sweetened mascarpone to completely change the taste.
