Easy scrambled eggs

Because we all need a good scrambled egg recipe in our repertoire. Whether it’s for a quick weekday breakfast or a relaxed weekend brunch, these eggs served with fresh herbs and a touch of Parmesan are sure to please.

Ingredients

  • 8 large eggs
  • 30 mL (2 tbsp.) grated Parmesan cheese
  • 30 mL (2 tbsp.) whipping cream (35%)
  • 15 mL (1 tbsp.) parsley, chopped
  • 15 mL (1 tbsp.) chives, chopped Salt and pepper
  • 15 mL (1 tbsp.) butter
  • 15 mL (1 tbsp.) olive oil

How to

In a large bowl, lightly beat eggs. Whisk in Parmesan, cream, parsley, chives, salt and pepper.

Melt butter with oil in a large skillet over medium-low heat. Pour egg mixture into skillet.
Cook for 5 to 7 minutes, stirring constantly, until eggs are cooked but still creamy. Serve.
