Crockpot Pizza Sloppy Joes

INGREDIENTS:

  • Nonstick cooking spray
  • 3 lbs uncooked ground turkey breast
  • 2 (14 oz) jars pizza sauce
  • 2 cups frozen stir-fry vegetables (with bell peppers & onions), thawed and drained
  • 1/2 of a (6 oz) can no-salt-added tomato paste
  • 16 whole wheat hamburger buns, split and toasted
  • 8 (1 oz) slices part-skim Mozzarella cheese, halved

DIRECTIONS

1. Coat a very large skillet with cooking spray. Heat skillet over medium-high heat. Cook half of the turkey at a time in hot skillet until turkey is no longer pink, stirring to break apart turkey as it cooks. In a 4 to 5 quart slow cooker stir together turkey, pizza sauce, vegetables and tomato paste.

2. Cover and cook on LOW 6 to 8 hours or HIGH 3 to 4 hours.

3. Spoon about 1/2 cup turkey mixture onto each bun bottom. Top each with a half-slice cheese and bun top.

Yield: 16 sandwiches.
Serving Size: 1 sandwich per serving.
