BAKED BEEF AND BEAN ENCHILADAS

Ingredients

  • 1 lb ground beef, browned
  • 1/2 onion-med. minced
  • 1 (1 1/4 ounce) package taco seasoning mix
  • 1 (16 ounce) can refried beans
  • 1 (4 ounce) can chopped green chilies
  • 1/2 cup beef broth
  • 1 (14 ounce) can mild enchilada sauce
  • 8 -9 flour tortillas
  • 3 -4 cups shredded cheese, mexican, mozzerella or cheddar

Directions:

Step 1.

Brown the ground beef and onion.

Step 2. 

Stir in taco seasoning mix, refried beans, green chilies, beef broth, and 1/2 cup enchilada sauce.

Step 3.

Cook on medium heat until thick.

Step 4. 

Stir occasionally for 10-15 minutes. Remove from heat.

Step 5.

Fill each tortilla with about 1/3 cup of the mixture and a small handful of cheese.

Step 6.

Roll tight and place them seam side down, side by side in a 13×9-inch baking pan.

Step 7.

Pour remaining enchilada sauce over the top and sprinkle with remaining cheese.

Step 8.

Bake on 350°F for 15-20 minutes.
