Overnight Oat Pancakes

Ingredients

  • 3/4 cup whole wheat flour
  • 3/4 cup oats
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tbsp. sugar
  • 1/2 cup nonfat plain yogurt
  • 3/4 cup nonfat milk (regular, skim, almond, etc.)
  • 2 eggs

Directions

  1. Mix together all the ingredients and refrigerate overnight.
  2. When ready to cook, heat a skillet or griddle over medium high heat. Spray with cooking spray.
  3. Use 1/4 cup per pancake, pressing down with a spoon if needed.Cook until surface bubbles. Flip and finish cooking.
