Pecan Pie Muffins – tastes just like pecan pie in muffin form! SO easy! Everyone LOVES these yummy muffins. Pecans, flour, vanilla, brown sugar, butter and eggs. Great for parties, breakfast, brunch and tailgating. Can make a day in advance and store in an air-tight container. Sprinkle with powdered sugar before serving. #muffins #pecan

INGREDIENTS:

  • 1 cup chopped pecans
  • 3/4 cup unbleached flour
  • 1 tsp vanilla
  • 1 cup packed light brown sugar
  • 11 Tbsp butter, melted
  • 2 eggs

INSTRUCTIONS:

  1. Preheat oven to 350ºF. Spray mini muffin pan with cooking spray or line with mini cupcake liners.
  2. Whisk together flour, vanilla, brown sugar, melted butter and eggs. Stir in chopped pecan.
  3. Fill mini muffin pan 3/4 way full.  
  4. Bake 12-15 minutes.

Transfer to wire racks immediately after baking.
