Cranberry and Coconut Cereal Bars

It’s easy to buy cereal bars, but believe it or not, it’s almost as easy to make them yourself. This simple and tasty recipe will help you feel good, since it contains only healthy ingredients. Make a big batch to last (maybe!) all week.

Ingredients

  • 500 mL (2 cups) flocons of quick cooking oats
  • 375 mL (1½ cups) slivered almonds
  • 125 mL (½ cup) honey
  • 60 mL (¼ cup) brown sugar
  • 45 mL (3 tbsp.) sunflower oil
  • 10 mL (2 tsp.) vanilla extract
  • 2 mL (½ tsp.) salt
  • 250 mL (1 cup) toasted coconut, shredded
  • 150 mL (⅔ cup) dried cranberries
  • 125 mL (½ cup) unsalted sunflower seeds, toasted
  • 60 mL (¼ cup) flaxseed, ground
  • 60 mL (¼ cup) wheat germ

How to

Preheat oven to 350°F (180°C). Grease a 2 L (8 in.) square pan.

Divide the oat flocons and almonds among a baking sheet. Bake for 10 to 15 minutes, stirring occasionally, until evenly toasted and almonds are lightly browned and fragrant. Let cool.

In a small saucepan, combine honey, brown sugar, sunflower oil, vanilla and salt. Heat over medium-low heat, stirring occasionally, until sugar is dissolved.

Meanwhile, in a large bowl, combine coconut, cranberries, sunflower seeds, flax seeds and wheat germ. Add oats and almonds. Pour in the honey mixture. Mix everything together with your hands.

Transfer to square pan, pressing firmly to even out thickness. Bake for about 25 minutes, until golden brown. Let cool completely before removing from pan. Cut into nine squares.

Tips

Use this recipe as a base and feel free to modify it – substitute cranberries for the grapes or honey for the maple syrup. Add a handful of chopped dried apricots for extra texture, or dark chocolate chips.
