Shrimp Fried Rice Made Skinny

Rice is an important ingredient, and we should include it in our meals from time to another. But sometimes, we just run out of ideas of how to prepare it. Well, today, I’m presenting you this beautiful shrimp fried rice. The combination of rice and shrimp is just ridiculously delicious. With a little vegetables, this dish becomes irresistble. Shrimp Fried Rice

You’ll Need

1 cup raw Basmati brown rice (about 4 cups cooked) or regular brown rice, see shopping tips below
1½ tablespoons canola oil or olive oil
1¾ cups cooked, large shrimp or medium shrimp (¾ pound)
Juice of 1 lemon
1 cup scallions, sliced (green onions)
1 cup celery, chopped
1 cup frozen or fresh edamame, thawed or peas
¼ cup reduced-sodium soy sauce
¼ teaspoon red pepper flakes
4 egg whites, scrambled
1 tablespoon sesame oil or canola oil, see shopping tips

How To

First, cook the brown rice according to package instructions, and prepare the vegetables.
Bowl the shrimp once you cut of the tails and squeeze a lemon over them.
In a large nonstick pan or wok, heat the canola oil over medium-high heat add in the shrimp and scallions and cook for 1 minute.
Add in the rice, celery, edmame or peas, soy sauce and red pepper flakes and cook for an additionnal 3 minutes.
In the same pan, push the rice mixture to the sides and add eggs on a side of the pan. Cook for 1 minute until the egg whites are cooked. Mix all together and add sesame oil and pepper and mix all together until hot.
It’s best served worm. You can also refrigerate for 2 days.
