- 1 medium size eggplant, chopped
- 2 small zucchini, diced
- (6 oz) fresh mushrooms, cut in quarters
- 2 tbsp olive oil
- 1 (24 oz) jar chunky style Italian sauce
- 1/2 tsp dried oregano leaves, crushed
- 2 tbsp fresh parsley, chopped
- 1 tbsp grated Parmesan cheese
