Collard Greens –  A famous traditional and southern vegetable meal. This recipe features a delicious blend of smokiness, vinegar, and savory – a good side dish for the weekends or anytime.

This Southern-Style Collard Greens is special because it  is cooked with smoked Turkey Legs, onions, garlic, and broth; when you cook everything in a single pot, the flavors get retained. 

You can also try another a version of collard greens that I like so much. It’s the East African style collard greens named sukuma wiki – a very easy and delicious recipe. This is made by braising the greens with tomatoes, onion, salt, and oil

How to make Collard Greens with smoked turkey

  1. Prep the collards
  2. Simmer the Smoked Turkey leg
  3. Cook the onions, garlic and add the seasoning 
  4. Add the Collard greens
  5. Finish it up   
     How to clean Greens If you have fresh collard greens, you will have  to clean the leaves well because they may be quite sandy.  Then, Fill the kitchen sink with lukewarm water, 1 tsp salt, and a half cup of vinegar-Swish. Soak the greens for about 5 minutes, then toss them up and down to loosen any lingering dirt. later, Change the water and rinse a couple of times until you no longer see any dirt or sand on the bottom

Ingredients

  • 4 lb bunches collard greens cleaned and chopped 1 pound
  • 1 large smoked Turkey Legs
  • 5 to 6 cups Chicken Broth
  • 1 large onion
  • 2 Tsp bouillon powder
  • 3 Garlic Cloves chopped
  • 2 Tsp paprika
  • 1 tsp Crushed Red Pepper Flakes
  • Salt and pepper to taste
  • 1 Tbsp apple cider vinegar 

Instructions

  1. Heat the oil in a large pot over medium-high heat, add the onions and cook till softened, about 5 minutes. Add the paprika, red pepper flakes, bouillon powder, salt, and pepper. Stir and cook until the garlic becomes fragrant. Few seconds.
  2. Add the chicken broth and the smoked turkey legs. Turn up the heat and leave to cook for about 20 to 30 minutes. (The turkey will release it’s smokey flavor inside the broth)
  3. Add more water or stock if needed. Turn the heat to low, add the collard greens and stir till everything wilts down. Cover and cook for 40 to 60 minutes, depending on how tender you want your greens. Be sure to stir at intervals.
  4. Once done, stir in the vinegar and shred the turkey. Stir and serve immediately
