This easy homemade divinity is incredible! Smooth, fudge and delicious, this snow-white dessert is surprisingly easy to make!
So confession: I’ve only had a deity once before this one, and it was a local favourite, See’s Candies. Maybe you heard of them?
I also had an ex-boyfriend whose grandmother loved her divinity, and I remember giving her a box for Christmas. To me, divinity has always felt like a Christmas candy recipe. I may be wrong, but there is just something admirable about divinity. It’s snow white, which is horrible for dessert, and it looks like little snowballs. In addition, it is some kind of nonsense, which always reminds me of the holidays.
If you didn’t know, divinity is usually common in the south and was invented (we think) by Karo corn syrup as a way to market their new product. It’s a combination of fudge, nougat and meringue that is totally unique and unlike any other. It is unlike the usual bark, crisp and sweet that is usually found at this time of year, and if you haven’t made it before, I highly recommend you do!

Ingredients
° 2 2/3 cups sugar
° 2/3 cup corn syrup
° 1/2 cup water
° 2 egg whites
° 1 teaspoon vanilla
° 2/3 cup chopped pecans
Instructions :
Covering a Cookie sheet with waxed paper or parchment paper.
In a 2-quart saucepan, heat sugar, corn syrup, & water on low heat TO sugar dissolves. Constantly moving. You will need to warm this total to 260 degrees Fahrenheit on a sweet thermometer.
Before the sweetness reaches 260, start beating the egg whites in a mixer on high speed until stiff peaks begin to form.
When the sugar total reaches 260 F, slowly pour it into the crushed egg whites. Beat the mixture on excessive speed.
Beat until now the mixture is not smooth and also keeps its shape. This may take about eight minutes.
Add vanilla and nuts.
Spray 2 tablespoons with nonstick cooking spray. Use those spoons that fall off with the help of using large spoons on the coated cookie sheets.
It works fast because theological units go up quickly.
Leave it on for about an hour.
Stored in an airtight case.
