Strawberry Cream Cheese Frosting

Easy, homemade Strawberry Cream Cheese Frosting for cakes, cupcakes, and other desserts. It’s perfect for spring and summer celebrations.

I wanted REAL strawberry frosting for my Real Strawberry Cupcakes and could not find an acceptable recipe. I wanted an intense strawberry taste without using an extract or gelatin. I came up with this recipe using a strawberry puree reduction that is truly the strawberry-est. If you love strawberries, you’ll LOVE THIS!!!

How to Prepare this amzing easy Strawberry cream cheese frosting made with fresh strawberries ??

Prep Time: 10 minutes |  Cook Time: 15 minutes |  Total Time: 25 minutes

Ingredients

  • 1 cup chopped fresh strawberries
  • 1 tablespoon granulated sugar
  • 8 tablespoons (4 ounces) unsalted butter, at room temperature
  • 8 ounces cream cheese, at room temperature
  • 1 teaspoon vanilla extract
  • 2 1/2 cups powdered sugar

Instructions

  1. Combine the fresh strawberries, sugar and a splash of water in a small saucepan. Turn the heat to medium low, and cook while stirring every few minutes until the strawberries reduce to 1/4 cup.
  2. Stir frequently, and lower the heat as needed to prevent burning. You can add a splash of water to help, if needed. It should take about 20-30 minutes, and it will turn into a thick jam that looks like preserves.
  3. Scrape the strawberry mixture out of the saucepan, and let it cool in a separate bowl.
  4. Meanwhile, beat together with an electric mixer on high the butter and cream cheese until creamy. Add the strawberry mixture and vanilla, and beat until combined.
  5. Finally, stream in the powdered sugar while beating until everything is creamy and smooth.
  6. Use on cupcakes, in between cake layers, or place in a plastic storage bag and freeze for up to 3 months.

Notes

You can add a drop of two of red food coloring if the color isn’t pink enough for you.

To use frozen cream cheese frosting, simply defrost it in the fridge overnight before using.
